Sometimes I just need something simple to sweeten the day, and these easy no-bake cookies do the trick. Call me a big kid, but I find these so satisfying! Actual kids love them too!
1 stick of butter
1 1/2 cups of sugar
1/2 cup oat milk
4 tablespoons cocoa
1/2 cup crunchy peanut butter (can also use almond butter)
3 1/2 cups quick cooking oats
2 teaspoons vanilla
Optional: if you are feeling some fruit with your cocoa, add 1/2 C shredded coconut or 1/2 C dried chopped cherries
In a large saucepan on medium heat combine butter and sugar, then add milk and blend until it begins to dissolve the sugar. Add cocoa then heat to a slow rolling boil mixing well. Remove from heat and add vanilla, nut butter, and oats. Form into balls, flatten them and place on a lined cookie pan. Refrigerate until cold and firm, if you can wait that long!
