Matcha Coconut Orange Oatmeal Pancakes

These lovely, mildly sweet green pancakes are full of goodness, tropical flavors, and antioxidants! I hope you have fun trying them! Pancakes are pretty forgiving + easy to improvise, so I challenge you to add in something new, you only live once 😉

1 egg

2/3 C oats

3/4 C almond milk

3 Tablespoons EVOO

2/3 C flour

1 1/2 t baking powder

A pinch of salt

1 T sugar or honey (can use more or skip, depending on your taste)

2 t matcha (I like to use Matchalove matcha)

1/2 t coconut extract

1/3 C shredded coconut and more on top

Zest from 1/2 an orange plus 1/4 C of the juice

Beat egg then add all wet ingredients and the oats and let sit for 5 min. In a separate bowl sift together flour, baking powder, coconut, matcha, salt + sugar. Fold it into the wet ingredients along with the coconut and orange zest and blend until just mixed.

Cook the pancakes a couple minutes on each side and top with more coconut and some fresh mango, pineapple, or papaya on the side. Enjoy while dreaming of a Hawaiian sunrise and the scent of plumeria blooms (that’s what I do anyway)!
